Pumpkin Donuts

Makes 6 donuts

Men have 3 donuts + 1 protein shake or 5 egg whites

Women have 2 donuts + 1 protein shake or 3 egg whites

The donut craze is crazy! With specialty donuts shops opening up nation wide its hard to resist the craze! However, did you know that the average donut contains 400-500 calories- yikes! Did you know by purchasing a mini donut pan at your local Wal-mart or Bed Bath and Beyond you can make your own, healthier donuts?!

The donut batter:

1 cup oat or bobs red mill flour- I typically use oat flour

** did you know you can make your own oat flour by blending oats! Yep its that easy!

2 tsp. baking powder- this what makes them rise!

6 egg whites whipped

1/3 cup pumpkin puree- NOT pie filling

¼-1/2 Almond or coconut milk- slowly add as you go

Dash of cinnamon

For donut topping:

Dash of pumpkin spice

Dash of cinnamon

2 tbsp. Stevia in the raw

To Make:

  • Place egg whites in large bowl and whip well- add in pumpkin pureee
  • Add oat flour and baking powde- mix well
  • Slowly add in milk—you want a batter that is slightly thicker then pancake mix
  • Spray donut pan with PAM spray well.
  • Pour batter evenly in 6 donut tins.
  • Bake 325 for about 8-12 min or until golden brown
  • Once donuts are baked immediately roll them in the topping mixture and cool on wire rack.

Notes:
These are great dipped in coffee! These also make for a great, simple, healthy kid breakfast!
