This is quit possible my new favorite summer salad! Super easy to make, great for summer BBQ’s, healthy and the kids loved it too!
1lb chopped chicken – either grilled or baked
1 large head of lettuce – chopped
1 chopped yellow pepper
2 small roman tomatoes chopped
½ cup black beans
1 cucumber sliced
Cilantro to taste
- Chop all of the above and combine in a bowl
¾ cup 0% Greek yogurt
1 Tbsp. balsamic vinegar
Sea salt/ pepper to taste
Dill – to taste
- Combine in a small bowl and pour over the top of the salad
Super easy, super quick and a hit at all BBQ’s
Makes: 6 servings: MACROS per serving: 180cals/ 15g carb/ 14g protein/ 2-3g fat depending on the yogurt you use.
